Tea connoisseurs think that the best cup of tea is brewed in a small Yixing teapot. For centuries the little Chinese province of Yixing has been producing these highly collectible teapots. The beauty of these tea pots lies in the way tea is prepared. Hot water is poured into the tea pot to rinse the tea pot, and then refilled with hot water and a 1/3 of tea leaves. Once the leaves have been soaked in the hot water, drain the water out immediately. Thus leaving only the tea leaves in the pot. Then refill the pot with hot water up to the brim and leaves to steep for half a minute. While the tea is being steeped, the cups should be rinsed with hot water to warm the cup. Then enjoy.
There is one thing to remember when dealing with Yixing tea pots. Never rinse or wash them with soap due to the nature of it's clay. The clay used in the tea pots will absorb the soap and make all future teas have a soapy taste, since there is no glaze used. What will happen however, is tea sediments will begin to build inside the pot. Eventually you will be brewing tea within tea, thus giving the tea a very unique taste.
