General Tea Brewing Guide

We highly recommend the use of Spring Water. When you purchase premium tea, it makes good sense to infuse it in the best water you can find.

Green Teas The recommended temperature is 160-180ºF depending on the type of green tea. Most green teas however, benefit with cooler water and a shorter brewing time.

The recommended ratio of three grams of tea to five ounce of water is best for brewing tea in a small pot. Remember to cover the pot as this will help the leaves expand and release the sweet nectar and will provide for multiple infusions.

If using a Yixing teapot, steeping time is 30 seconds - 1 minute
Black teas The recommended temperature is 195-200ºF.

Recommended ratio is one teaspoon of leaves per cup of water and steeped for five minutes. Remember to cover the pot as this will help the leaves expand and release the sweet nectar and will provide for multiple infusions.

If using a Yixing teapot, steeping time is 30 seconds - 2 minute
Oolong teas Dark Oolongs - The recommended temperature is 195-200ºF. and steeped for five to seven minutes.
Lighter Oolongs - The lower temperatures are best for Oolongs in the 175-185ºF range and steeped for three to five minutes.

The recommended ratio is 2 teaspoons of leaves per cup of water.

If using a Yixing teapot, steeping time is 30 seconds - 1 minute
White teas The recommended temperature is 160-185ºF.

Recommended ratio is two teaspoons per cup of water and steeped for seven minutes since these teas tend to be very light. Remember to experiment with the brewing time if the tea is bitter, reduce your steeping time.
